Costanza offers relaxed and informative classes covering fundamental principles and techniques that offer a genuine insight into the world renowned cuisine of Central Italy. All classes culminate in a 3-course Tuscan feast. Classes are normally held in the afternoon and participants may choose their dishes. Ingredients are bought with the cook at the local supermarket. The kitchen is cleaned by Costanza and her assistant. Fresh pasta course on request.

Fried zucchini flowers

Arista (pork) cordon bleu (with fontina cheese and cooked ham)

Traditional Summer second dish consisting of sliced veal with tasty tuna topping

Pan fried chicken fillets bathed in white wine then gently simmered with freshly squeezed lemon juice

Thinly sliced mixed capsicum gently sautéed in extra virgin olive oil alternatively grilled & marinated with capers & black olives

Dessert
Tiramisu (classic Italian dessert with pavesini biscuits
Soaked in coffee with layers of creamy mascarpone)
